During
cooking, when heat is applied to cook the food, the temperature rises. The food
is deemed cooked when it reaches a critical temperature, and below that, it
remains uncooked. So, heating above or below a critical temperature makes the
food cooked or uncooked. One example is the egg, perhaps the most simple food
to cook.
When
an egg is cooked using heat, it changes conformation, which occurs due to heat
applied, and changes the liquid in the eggshell to solid, whether in scrambled
eggs, hard-boiled eggs, or others. So an egg goes from being uncooked to cooked
at a critical temperature and may also be cooked in multiple ways at varying
temperatures.
As for eggs, they undergo several transformations when heated from 60 to 70 or 80 degrees Celsius. Different proteins in the egg unfold at varying degrees of temperature, altering the egg's texture. While just cooking a simple food like an egg, various transitions describe the changes in the egg's structure. One needs to be aware of the temperature to manage these different transitions and control the texture of an egg for taste.
